Prepare stuffing
In a large saucepan, heat olive oil.
Add onion and saute 2 minutes or until softened.
Stir in garam masala and cook 1 minute.
Add mushrooms, parsnips and carrots; cook, stirring 5 minutes.
Remove from heat; stir in walnuts, thyme, bread crumbs, egg and salt and pepper.
Stuff and truss chicken. Place breast down in a roasting pan; add 1/4 cup water.
Roast 45 minutes; turn chicken breast up and dot with margarine.
Roast about 45 minutes or until a meat thermometer inserted in thickest part of thigh (not touching bone) registers 185° (85°C).
Transfer to platter; keep warm.
