Cream Of Potato Soup(Heart Smart) is an impressive soup you can prepare in about 1 hour 50 minutes. In medium saucepan over medium to high heat, melt margarine. Add onion and celery.
Cook about 4 minutes or until soft, stirring frequently.
Add potatoes, chicken broth, parsley, thyme, celery seed, salt and pepper.
Bring to a boil.
Reduce heat and cover.
Simmer about 15 minutes or until potatoes are almost tender.
Add milk.
Simmer, uncovered, 5 minutes, stirring occasionally.
In blender at medium speed, blend about 1/4 of the mixture at a time until smooth.
Return to saucepan, heat about 1 minute.
Makes 4 servings, about 1 cup each.
