Potato Pancakes
Potato Pancakes is an moderately easy dinner. Made with 3 large baking potatoes, peeled and shredded, 1 medium onion, finely chopped, 1 c. diced, cooked ham, 1/2 c. all-purpose flour and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In medium bowl, combine all ingredients except oil and applesauce.
In large skillet, heat 1/4 cup oil over medium to low heat.
In hot oil, spoon about 3 tablespoons potato mixture per pancake into skillet and flatten slightly.
Cook pancakes, turning once while cooking, until golden brown on each side.
Add oil as needed to cover bottom of skillet.
Drain on paper towels.
Serve warm with applesauce.
Makes 12 to 14 pancakes.
