Taco Stir-Fry
Taco Stir-Fry is an impressive dinner. Made with 1 lb. lean ground beef, 1/4 c. chopped onion, 1 tbsp. oil, 1 c. whole kernel corn and 1 (1 lb.) can tomatoes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Brown ground beef and onion in oil in a large skillet, stirring until crumbly.
Pour off drippings.
Stir in corn, tomatoes and seasonings; bring to a boil.
Simmer, covered, over low heat for 10 minutes.
Stir in 1 cup of cheese and corn chips. Cook until cheese is partially melted.
Place lettuce on serving platter.
Spoon ground beef mixture over top.
Sprinkle with remaining 1/2 cup of cheese.
Yields 6 servings, about 580 calories each.
