Chicken Enchilada Soup
Chicken Enchilada Soup is an impressive Mexican soup you can prepare in about 2 hours 8 minutes. Made with c. vegetable oil, c. chicken base*, c. diced onion, . ground cumin and . chili powder, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In large pot, place oil, chicken base, onion and spices.
Saute until onions are soft and clear, about 5 minutes.
In another container, combine Masa Harina with 1 qt. water.
Stir until all lumps dissolve.
Add to sauteed onions and bring to a boil.
Once mixture starts to bubble, cook 2-3 minutes, stirring constantly. This will eliminate any raw taste from Masa Harina.
Add remaining 3 qts. water to pot.
Add tomatoes; return to boil, stirring occasionally.
Add cheese.
Cook, stirring occasionally, until cheese melts.
Add chicken; heat through.
Makes 1 1/2 gallons, 16-20 servings.
Can easily be halved.
