Dora Allin's Scalloped Eggplant Casserole
Dora Allin'S Scalloped Eggplant Casserole is an moderately easy dinner. Made with 3 medium eggplants, peeled and cut up, 1/2 stick butter, 1/2 onion, grated, 3 eggs and 1 c. milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Boil eggplant until soft, drain.
Add butter, salt and pepper, mixing well.
Beat the eggs into the milk and add to eggplant. Add cracker crumbs and 1/2 cup of the cheese.
Mix well and pour into a greased casserole dish.
Bake at 350Β° until it is firm throughout, about 45 to 50 minutes.
During final 10 to 15 minutes, add remaining cheese to melt on top.
