Farcement
Farcement is a Savoyard potato pudding baked or steamed with grated potatoes, prunes, bacon, cream, and eggs. Sliced from a ring mold, it is sweet-salty, hearty, and perfect beside alpine meats.

Squeeze excess moisture from grated potatoes and mix them with cream, eggs, flour, nutmeg, and salt.
Line a buttered mold with bacon strips and scatter prunes through the potato mixture.
Pack the mixture into the mold, cover, and bake or steam slowly until set.
Unmold the farcement and slice it warm to show the bacon and prune-studded interior.
