Gajak
Gajak is a North Indian winter brittle of toasted sesame seeds bound with hot jaggery syrup. It snaps cleanly, tastes nutty and caramelized, and pairs well with tea after a cold-weather meal.

Toast the sesame seeds gently until fragrant, then keep them warm so the syrup coats them evenly.
Melt jaggery with a spoonful of water and simmer until it reaches a hard-ball stage.
Stir in ghee, cardamom, salt, sesame seeds, and nuts quickly before the syrup stiffens.
Spread the mixture between greased parchment sheets and roll to an even thin slab.
Score while warm, then cool completely and break into crisp pieces.
