Chicken breasts into chunks or slices.
Mix salt, pepper, oregano and flour.
Dredge chicken in flour mixture. Put olive oil and butter/margarine in heated pan.
Add chicken and stir-fry approximately to 10 minutes.
Add tomatoes, garlic and coriander to chicken stir-fry
3 to 5 minutes. Add lime juice.
Lid and steam briefly. Serve with nutmeg over spinach.
