Wash, core, peel and quarter apples.
Place apples and apple juice in a lightly oiled crock-pot.
Cover and cook on low setting for 10 to 18 hours (on high setting the last 2 to 4 hours).
Fruit should cook until almost an applesauce capacity.
You can use a potato masher to get rid of lumps.
For each pint of cooked fruit, add sugar, cinnamon, allspice and cloves.
Stir well.
Cover and cook on high setting for 6 to 8 hours, stirring about every 2 hours.
Remove cover after 3 hours to allow fruit and juice to cook down.
Spoon into hot jars and process in boiling water bath. Makes about 5 (1/2 pint) jars.
