Salsa
Salsa is an moderately easy dinner. Made with 1/2 gal. chopped ripe tomatoes, 3 large onions, coarsely chopped, 2 to 4 finely chopped jalapeño peppers, 2 to 4 cayenne peppers, finely chopped and 2 bell peppers, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Put whole tomatoes in pot of boiling water for about 2 minutes, then put into cool water.
This makes it easy to remove skins.
In a large pot, bring all ingredients to a boil. Reduce heat and simmer for 1 to 3 hours or until desired thickness, stirring often.
Pour into pint jars, then process in water bath for about 4 to 5 hours.
Makes 6 to 8 pints.
