Seafood Gumbo
Seafood Gumbo is an impressive dinner. Made with 2 lb. peeled shrimp and/or crawfish tails, 1 lb. crabmeat, 3 to 4 c. okra, 2 large onions, chopped and 3 stalks celery, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Fry okra in small amount of oil.
Add all onions, celery, green pepper and garlic.
Cover with top and cook.
Cut sausage up into small pieces and cook in microwave oven long enough to rid it of most of the grease. Drain.
Add tomatoes and bay leaves.
Salt and pepper to taste to okra mixture.
Cover and cook.
Make roux in large pot.
Pour ingredients from skillet into roux.
Add water, shrimp, crabmeat, crawfish and sausage.
Bring to boil. Serve over rice.
An added treat is to add crawfish bisque heads. It cannot be beat.
