Vegetarian Split Pea Soup
Vegetarian Split Pea Soup is an moderately easy dinner. Made with 1 lb. split peas, rinsed and drained, 7 c. water, 2 tbsp. oil, 1 medium onion, chopped and 1 tbsp. finely chopped garlic, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook onion and garlic in oil until softened.
Put peas (split) and 7 cups water in large pot and add onion and garlic.
Bring to a boil slowly and simmer, covered, for about 45 minutes or until peas are very tender.
Cool slightly.
Blend in blender in small portions until fairly smooth.
Return to pot and add potatoes, carrots, celery and salt and pepper to taste.
When vegetables are tender; add frozen peas which have been thawed.
Cook for another 10 minutes.
