Yin Yang Fried Rice
Yin yang fried rice is a Hong Kong banquet dish where egg fried rice is covered with two contrasting sauces: a red tomato seafood sauce and a pale creamy chicken or egg-white sauce.

Fry the rice with beaten eggs, peas, carrots, scallions, and salt until hot and separate.
Simmer tomato sauce with shrimp and a little stock until the shrimp are just cooked; thicken lightly.
Make a pale sauce with stock, milk or cream, chicken, and cornstarch slurry until glossy.
Mound the fried rice on an oval platter and spoon the red sauce over one side.
Spoon the white sauce over the other side in a yin-yang curve and serve immediately.
