Dutchie
A Dutchie is a Canadian square yeast doughnut folded with raisins and nutmeg, fried until golden, and coated in a thin vanilla glaze for a chewy bakery treat with sweet pockets of fruit.

Bloom the yeast in warm milk with a spoonful of sugar until foamy.
Mix in flour, eggs, butter, remaining sugar, nutmeg, and salt, then knead to a soft elastic dough.
Fold in the raisins, cover, and let the dough rise until doubled.
Roll the dough thick, cut it into squares, proof again, and fry until deeply golden on both sides.
Whisk powdered sugar with vanilla and a little milk, glaze the warm Dutchies, and let them set on a rack.
