Easy Sauerkraut Salad
A crisp cold sauerkraut salad folded with celery, onion, and red pimento, then rested in a sweet-tart dressing until the cabbage turns bright, juicy, and ready for a picnic table.
Loosen the drained sauerkraut with a fork so the strands separate instead of clumping.
Fold in the celery, onion, and pimentos until the vegetables are evenly scattered through the kraut.
Whisk the sugar, vinegar, celery seed, and pepper until the sugar begins to dissolve.
Pour the dressing over the salad, toss well, cover, and refrigerate overnight.
Stir again before serving so the sweet-tart brine coats every chilled spoonful.
