German Potato Salad uses cooked potatoes, crisp bacon, green onions, and a hot cider-vinegar dressing thickened with flour and bacon drippings. The salad rests at room temperature so the sweet-sour dressing soaks into the thin potato slices.
Peel the cooked potatoes and cut them into thin slices.
Fry the diced bacon until crisp, then remove it and reserve 1/2 cup drippings.
Blend the sugar, flour, salt, and pepper, then stir the mixture into the drippings to make a smooth paste.
Add the cider vinegar and water and boil 2 to 3 minutes to thicken.
