Kilishi is Nigerian spiced dried beef, sliced thin, coated with a groundnut-chile seasoning, and dried until chewy at the center with crisp edges. It is bold, smoky, and snackable, with yaji spice bringing heat, ginger, garlic, and roasted peanut depth.

Slice beef very thinly across the grain and pat it dry so the seasoning can cling.
Mix groundnut powder, yaji, ginger, garlic, chili, salt, oil, and enough water to make a paste.
Coat the beef lightly, arrange on racks, and dry in a low oven or dehydrator until mostly firm.
Finish briefly over higher heat or under a broiler for roasted edges, then serve with onion and cucumber.
