Lafun
Lafun is a Nigerian cassava swallow made from fermented cassava flour cooked into a smooth, stretchy mound. Its mild tang and soft texture are designed for pinching and dipping into richly seasoned soups or stews.
π Recipe adapted from Wikidata (Dish)
Whisk the lafun flour with part of the water to make a smooth slurry with no dry pockets.
Bring the remaining water and salt to a simmer in a sturdy pot, then stir in the slurry gradually.
Cook over medium heat, turning and pressing with a wooden spoon until the mixture becomes smooth, thick, and stretchy.
Shape into mounds while warm and serve beside soup or stew for dipping.
