Ofada Rice
Ofada rice is a Nigerian heritage rice dish with nutty local grains, a rustic aroma, and a glossy pepper stew pairing, served with tender meat, eggs, or fried plantain.

Rinse the Ofada rice several times, then parboil and drain to soften the firm grains.
Blend peppers and onion coarsely, then simmer the mixture until much of the moisture cooks off.
Bleach palm oil carefully, add locust beans, and fry the pepper base until glossy and fragrant.
Add stock and cooked beef pieces, then simmer until the sauce clings to the meat.
Finish cooking the rice separately until tender, and serve it with the pepper stew and eggs.
