Old Fashioned Chicken Noodle Soup
Old Fashioned Chicken Noodle Soup is an moderately easy dinner. Made with 1 hen or large, heavy fryer, 2 to 3 qt. water, 2 or 3 celery ribs, 1 small onion and 2 green onions, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine all ingredients, except noodles, in large pot and cook about 1 1/2 to 2 hours.
Skim off the foam that develops when hen comes to a boil.
Remove chicken and strain broth.
Remove grease from top of broth, using a ladle, or chill broth until fat congeals, then remove. (I like to use one of those pitchers which allows you to pour off the broth and discard the grease.)
