Potato Pancakes
Potato Pancakes is an moderately easy dinner. Made with 4 large potatoes (about 1 1/2 lb.), peeled, 1 small onion (optional), 1 egg, 1 tsp. salt and 2 tbsp. matzoh meal or flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Grate potatoes and onions, using grating disc or food processor or large holes of grater.
Put potatoes and onion in wire strainer and squeeze out as much liquid as possible. Transfer to bowl and mix in egg, salt, flour or Matzoh meal and baking powder.
Heat oil in heavy skillet.
Drop 2 tablespoons of mixture in pan.
Flatten with spoon and fry over medium heat 4 to 5 minutes on each side or until brown.
Serve hot with sour cream or applesauce.
