Sauerkraut Apple Relish
Sauerkraut apple relish is a chilled German-style condiment with tangy cabbage, crisp apple, celery, peppers, and a sweet red-wine vinegar dressing. It is best after a long rest, served beside pork, sausages, or rye bread.
Whisk the sugar and red wine vinegar until the sugar begins to dissolve.
Fold in the drained sauerkraut and diced apples so the fruit is coated.
Add celery, peppers, and pimentos if using, then toss until evenly mixed.
Cover and refrigerate at least 4 hours, stirring once or twice as it chills.
Serve cold after the relish has mellowed, preferably the next day.
