Sauerkraut Salad is a make-ahead German-style relish salad with drained kraut, green pepper, onion, and celery in a sweet vinegar dressing. A full day of chilling lets the vegetables mellow and stay crisp, creating a bright side for pork, sausages, sandwiches, or picnic plates.
Combine the drained sauerkraut, green pepper, onion, and celery in a large nonreactive bowl.
