Shredded Potato Pancakes
Shredded Potato Pancakes is an moderately easy dinner. Made with 4 large potatoes, shredded and peeled, 2 eggs, 1 small onion, grated, 1/3 c. flour and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Spread shredded potatoes on a towel and squeeze dry.
Place in a large bowl; stir in eggs, onions, flour and salt.
In a large skillet, heat oil over medium heat.
Drop potato mixture by scant 1/2 cup into skillet.
Flatten each to about 4-inches round.
Cook until golden brown, about 4 minutes.
Turn and cook other side. Remove to paper towel to drain.
Serves 4.
