Spanish Potato Omelet
Spanish Potato Omelet is an moderately easy Spanish breakfast dish you can prepare in about 1 hour 16 minutes. Made with small potatoes, medium onions, to 8 oz. smoked ham, oil and eggs, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Slice potatoes, onions and ham with thinnest slicing disk of food processor.
(If you don't have food processor, slice as thinly as possible by hand.)
Saute potatoes and onions in oil until soft, but not brown.
Butter an 11 3/4 x 7 1/2-inch glass baking dish. Layer potatoes, onions and ham in dish.
Scramble eggs with salt and pepper to taste and pour over all.
Bake at 325Β° for 20 to 25 minutes, or until eggs are set.
Cut into squares.
Serves 6.
