Vegetarian Black Bean Chili
Vegetarian Black Bean Chili is an impressive dinner. Made with 2 c. black beans, 1 bay leaf, 3 tbsp. corn oil, 3 medium onions, diced and 2 tbsp. ground cumin, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Sort and clean beans.
Soak beans overnight.
Drain, cover with few inches fresh water.
Bring to boil with bay leaf.
Cook until beans are done.
Heat oil in large skillet; saute onion until soft.
Add cumin, cayenne pepper, coriander, garlic, salt and chili pepper.
Cook 5 minutes, add tomatoes in juice.
Simmer 15 minutes.
Add beans.
Season to taste with vinegar, brown sugar and cilantro.
Serve with grated cheese or sour cream.
