Yakitori(Japanese)
Yakitori(Japanese) is an moderately easy dinner. Made with chicken breast, skinless, 5 tbsp. soy sauce, 5 tbsp. saki or cooking sherry, 2 1/2 tbsp. mirin and 1 small piece fresh ginger root, grated, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Soak chicken in combined sauces for 20 minutes or longer.
Put 4 or 5 pieces of chicken on bamboo stick.
Simmer down remaining sauce until quantity is half.
May need to use a little cornstarch in water to thicken.
Broil on charcoal grill.
Brush several times.
(Buy mirin in Oriental food store; purchase Oriental grater.
Saki is found in wine specialty stores.)
