Chicken Curry, Southern is an impressive dinner. Made with 1 (3 1/2 lb.) broiler-fryer, cut up, 1/4 c. flour, 1/4 c. salad oil, 2 garlic cloves, halved and 2 medium onions, thinly sliced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Coat chicken with flour.
In 12-inch skillet over medium-high heat in hot oil, brown chicken.
Remove chicken from skillet.
In drippings in skillet, cook garlic, onions, celery, green pepper, curry powder and salt until vegetables are tender.
Stir in tomatoes and their liquid; add chicken pieces and heat to boiling. Reduce heat to low; cover and simmer 40 minutes or until chicken is fork-tender.
Prepare rice and add raisins.
