Lamaniets
Lamaniets, also called lamantsy, are Belarusian honey shortbread cookies linked to Christmas Eve supper. They bake into firm golden pieces that soften beautifully when served with honeyed poppy milk.
π Recipe adapted from Wikidata (Dessert)
Warm honey with oil and water just until loose, then stir in rye flour, wheat flour, salt, poppy seeds, and baking soda.
Knead briefly into a firm unleavened dough and rest it so the flours hydrate.
Roll the dough into a slab, cut small diamonds or squares, and bake until dry and golden at the edges.
Cool completely and serve the lamaniets with honeyed poppy milk or store them crisp.
