Papad
Papad is a crisp Indian lentil wafer, rolled thin and cooked until bubbly and brittle, then served with chutney as a salty, peppery snack that shatters at the table.
π Recipe adapted from Wikidata (Baked Good)
Mix urad flour, rice flour, spices, salt, oil, and enough water to make a firm dough.
Knead until smooth, rest briefly, then divide into small balls.
Roll each ball into an extremely thin round and dry until the surface feels leathery.
Roast over a flame or fry quickly until the papad blisters and turns crisp.
Serve the wafers with mango chutney and cilantro while they are still brittle.
