Quanta Firfir
Quanta firfir is an Ethiopian dish of torn injera tossed with berbere, onions, spiced butter, and strips of dried beef. The injera soaks up the chile-rich sauce while still keeping a little chew, making each forkful tangy, savory, and warming.

Soften the dried beef briefly in warm water if very hard, then drain and slice into bite-size strips.
Cook onion in niter kibbeh until sweet, then add berbere and tomato and fry into a red sauce.
Stir in the beef and a splash of water, simmering until the sauce coats the pieces.
Fold in torn injera just until coated and warm, then serve with a boiled egg or yogurt.
