Quiaude
Quiaude is a French-Canadian fish chowder with flakes of white fish, potatoes, onion, herbs, and a creamy broth. It tastes gentle and coastal, with enough body for bread to drag through the bowl.

If using salt cod, soak and rinse it until pleasantly seasoned rather than harshly salty.
Cook onion in butter, then add potatoes, bay leaf, fish stock, and enough water to cover.
Simmer until the potatoes are tender, then add fish and cook gently until it flakes.
Stir in milk or cream and warm without boiling so the broth stays smooth.
Season with pepper and parsley, then serve with bread.
