Sahoaba is a Malagasy coconut-milk dish of cassava, green banana, and yam simmered with vanilla and warm spices until creamy, gently sweet, and spoonable for a comforting bowl.

Peel cassava, green bananas, and yam, then cut them into even chunks.
Simmer the cassava first until partly tender, then add banana and yam.
Pour in coconut milk with vanilla, star anise, ginger, cumin, sugar, and salt.
Cook gently until the roots are tender and the coconut milk thickens around them.
Serve warm with toasted coconut scattered over the top.
