Sauerkraut Salad
Sauerkraut Salad pairs cold chopped sauerkraut with bell pepper, carrot, onion, and a boiled sweet vinegar dressing. After a short rest the salad becomes a crisp, tangy side that works especially well with fish or other simple mains.
Mix the chopped sauerkraut, bell pepper, carrot, and onion in a serving bowl.
Combine the water, vinegar, and sugar in a saucepan.
Boil the dressing for 10 minutes so the sugar fully dissolves and the mixture slightly concentrates.
Pour the hot dressing over the sauerkraut mixture and toss well.
Let the salad stand about 45 minutes before serving, or chill it for a colder side.
