Zuccotto is a chilled Florentine dome dessert lined with liqueur- or syrup-brushed sponge cake and filled with ricotta cream, chocolate, and candied fruit. Once unmolded, the dome slices cleanly to show a pale creamy center beneath a patterned sponge shell.

Line a bowl with plastic wrap, then fit slices of sponge cake against the inside to form a neat shell.
Brush the sponge lightly with syrup so it is moist but not soggy.
Fold ricotta, whipped cream, powdered sugar, chocolate chips, and candied orange together; tint a portion with cocoa if desired.
Pack the filling into the sponge-lined bowl and cover with more sponge slices.
Chill until firm, unmold onto a plate, dust with powdered sugar, and slice cold.
