Dieter's Stir-Fry
Dieter'S Stir-Fry is an moderately easy dinner. Made with 1 lb. fresh or frozen flounder or cod fillets, 1 small bunch fresh broccoli, 2 tbsp. vegetable oil, 1 medium onion, sliced into 1/8-inch thick rings and 1 rib celery, sliced, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cut fish fillets into bite-size pieces.
(If using frozen fish, let it thaw slightly.)
Cut broccoli stems into 1/4-inch slices, reserve florets.
In a wok or large skillet, heat oil just to smoking point.
Add sliced broccoli, onion, celery, garlic and oregano; stir-fry over high heat for 5 minutes.
Add fish pieces, salt, pepper and lemon juice.
Bring to a boil.
Add reserved broccoli florets.
Reduce heat and simmer covered 5 to 10 minutes or until fish flakes easily with fork.
Serve immediately.
