Make a smooth dough from flour, butter, sour cream, egg, and sugar, then divide it into several equal pieces.
Roll each piece very thin and bake the sheets until just pale and firm.
Cook milk, cocoa, sugar, and flour into a thick chocolate custard, then cool until spreadable.
Stack the pastry sheets with thin layers of chocolate custard between them.
Cover with melted chocolate and butter, chill until firm, and slice into clean bars.
