Saganaki
Saganaki is Greek pan-fried cheese with a crisp golden crust and molten salty center. Finish it with lemon, oregano, and warm bread so the cheese can be eaten straight from the skillet.

Cut the cheese into thick slabs and briefly rinse the surface so flour will cling.
