Press the tofu well so the finished chikuwa will hold its shape.
Blend tofu, surimi, egg white, starch, ginger, salt, and a little soy into a smooth paste.
Shape the paste around oiled rods or into short tubes with a hollow center.
Steam until firm and springy, then cool just long enough to slice neatly.
Serve the slices with scallion, grated daikon, and ponzu or soy sauce.
