Unnakai
Unnakai are Malabar banana sweets made by wrapping mashed ripe plantain around a coconut, nut, raisin, and cardamom filling, then frying until golden. The finished pieces are oval and glossy, with a sweet aromatic center.

Steam or roast the plantains until soft, then mash them into a smooth dough with a pinch of salt.
Cook coconut, sugar, cashews, raisins, cardamom, and ghee until fragrant and lightly sticky.

Fry the rolls gently until golden on all sides.
Drain and serve warm as a sweet snack.
